Indian Spiced Charred Cabbage Steaks

Roasting is a common technique for preparing root veggies, but what about cruciferous vegetables? This is a simple and versatile side. We know cabbage is good for us but coming up with innovative ways of preparing it isn’t always so simple.

You’ll eat this with a knife and fork, almost as you would a steak. Cut thick slices and then dress both sides with a homemade spice mixture. This could be the base of a meal, topped with legumes or even a pungent cheese.

And you know how I feel about cruciferous vegetables. Broccoli, cauliflower, Brussels sprouts, kale, and cabbage are all cruciferous vegetables. Lab studies have shown that the phytochemical found in cruciferous vegetables, sulforaphane detoxifies carcinogens before they damage cells.

Indian Spiced Charred Cabbage Steaks

1/2 medium head cabbage, sliced thickly
2 tbsp olive oil
Indian spice mixture applied generously
Sea salt to taste

Method

1. Preheat oven to 400 degrees.

2. Dress cabbage slices with olive oil and spice mixture. Rub in with your hands. Repeat on the other side.

3. Bake for 15 minutes.

Indian Spice Mixture

1/2 tsp garam marsala
1/4 tsp turmeric
1/4 tsp coriander seed
1/8 tsp chili powder

Method

1. Combine well.
