Creamed Polenta with Garlic Roasted Mushrooms

Call polenta what you will–it was considered the poor man’s food in Italy and in my native South Carolina, where it’s known as grits. There’s little difference in the two forms except for a slightly grittier texture in the southern version. And at a dollar a pound for the organic version in the bins at your local health foods store, it’s undoubtedly a good deal. But that doesn’t make it any less tasty, especially topped with garlic roasted mushrooms.

Mushrooms are a great way to add a meatier texture to a recipe. You can add some nutrient density by adding in soy milk rather than using all water. The organic variety provides a whole form of soy which includes 9 grams of protein and 4 grams of dietary fiber per serving. Dr. Weir recommends 1 to 2 servings per day of whole soy, another protein source. According to health guru Christina Pirello, they include phytoestrogens, which act like estrogen receptors in the body.

Creamed Polenta with Garlic Roasted Mushrooms

4 cups water
2 cups organic soy milk
2 cups corn meal
1 tsp sea salt
2 tbsp organic extra virgin olive oil
2 large cloves garlic, minced
1 carton of sliced organic mushrooms, (experiment with various local more exotic varieties if available)
Sea salt to taste
Garnish with Italian flat leaf parsley


1. Add water to a large pot and bring to a boil. Add in 1 tsp sea salt.

2. Very gradually whirl in corn meal, whisking as you go. When the liquid runs out, add in soy milk and continue the process. Once the polenta is smooth and creamy set aside.

3. Add olive oil to a skillet and heat to medium heat. Add in garlic and saute until fragrant. Add in mushrooms and stir constantly. Season with sea salt.

4. Plate up with a generous scoop of polenta topped with mushrooms and garnished with parsley.
