Serene Soba Noodles in a Coconut Peanut Sauce

Peanut sauces are quite difficult to perfect, often too thick, too runny, or too salty. I’ve gone through a number of recipes over the years and I think I’ve finally gotten it right. This is a simple vegan meal that both the husband and I enjoy for those nights where take out seems just a little too tempting.

It’s rich and salty without being overdone. This is a great choice if you’re in need of a paycheck in a big way. Soba noodles are a native Japanese noodle made of buckwheat flour. Soba noodles provide nearly twice the protein of most rice varieties. Rutin, a kind of bioflavonoid that includes the catechins of green tea and the polyphenols of red wine is rarely found in grains except for buckwheat.

I love this video from Christina Pirello, host of Christina Cooks on PBS. She’s a foremost expert on holistic nutrition and a huge advocate for veganism. But even more than that, she knows how to cook. Watch as she prepares Dried Daikon, Kombu, and Shitake.

According to the Christina, eat this dish once or twice a month and you’ll be on your way to feeling lighter, fresher and a whole lot happier and healthier. Along with eating a healthy whole foods diet, this dish is a great liver, kidney and intestinal cleanser.

Detoxing is about making your vessel, this body you’ve been given as healthy as you possibly can. What does that have to do with your yoga practice? Our bodies are made of the foods we eat all the way down to the cellular level. The point of Serene Kitchen is to show readers that your food impacts your happiness, or serenity for that matter, and if you want a cleansed mind, your body must be clean as well. Your cells absorb every aspect of the foods you eat.

Eggless Egg Salad: Yes You Can

I’ll admit it, I was a bit skeptical about the concept of an “eggless egg” anything, until having tried a tofu scramble. The sheer deliciousness of the tofu scramble changed my perception entirely. And it’s the same here. The use of turmeric is critical. It’s a high impact spice known as a cancer fighting agent, but it colors the tofu and gives it a yummy eggy texture and color.

I served this on a spelt English muffin with some buttery local lettuce and a thick slice of South Carolina heirloom tomatoes. Toast the bread and slather with a bit more vegan mayo and drizzle with high quality olive oil and sea salt. Seriously tasty. Even if you’re not a vegan this is a great way to enjoy an old favorite in a much more healthful manner because vegan mayo is much healthier than regular mayo and less disgusting to make. The idea of working with raw eggs and olive oil grosses me out just a touch.

Food Sourcing and Jivamukti Yoga

I’m a big fan of the Jivamukti Yoga Studio in Charleston, South Carolina. And last week, as I periodically do, I drove down the road for a class. The classes are such a blast and the two owners Geoffrey and Andrea are seasoned teachers with a lot to offer.

For a break from the norm, I hit up their Rockasana class on Tuesday nights with music so loud that Geoffrey has to teach through a mic. I don’t count it as my regular morning class, but even still, it’s fun and it sets my adrenolene pumping like no other. When Welcome to the Jungle comes raging through the speakers I’m able to get out of my mind and into my body in a real way.

A Serene Breakfast Makes For a Blissful Day

Breakfast is the most important meal of the day, right? Well sort of. Yogis believe that during lunch time digestion is working at full capacity, so you should be eating your biggest meal. But breakfast, on the other hand, is the meal that helps to outline what your day will look like.

We’ve discussed how your morning beverage impacts your day. For the most part, tea is my morning beverage of choice. If you’re a vata or a pitta then this is likely the case for you. These Ayurvedic doshas are strongly affected by coffee, so it’s pretty much a no-go. For an out-of-balance vata, anxiety quickly becomes a problem and for an out-of-balance pitta anger is often the resulting emotion. Coffee in itself causes the anxiety that plagues a vata.
